Breakfast Quiche

1 pie crust (frozen or pre-made is fine)
8 oz. sausage, browned and drained
1-1/2 --2 cups of Southern-Style hashbrowns
1/4 cup sliced green onion
1/4 cup chopped red or green bell pepper
1/4 cup shredded sharp cheddar,
4 large eggs,
1/4 cup milk
1/4 teaspoon each salt & pepper

Preheat oven to 375*F.
Place crust in pie pan on baking sheet. Sprinkle cooked sausage on bottom of crust.
Top with potatoes, onions, peppers and cheese.
Beat eggs, milk, salt & pepper well; pour over sausage mixture.
Bake 30 minutes until egg mixture is cooked and crust is lightly browned.
Sprinkle with additional cheese & peppers/onions if desired.
Also good with sour cream and salsa!

I forgot to get a picture right away... Needless to say, it was a big hit, and Jenny keeps asking for "pie". :-)
