New Recipes!

Last night I found two new recipes that have already found there way onto recipe cards in my box. :) I thought I would share them here.

"House Chicken"
4 chicken breasts (boneless, skinless)
1 egg
1 cup bread crumbs (I used broken up chips)
1/2 cup parm. cheese (grated)
pepper
2-3 cloves garlic, chopped finely
Olive Oil

Mix crumbs, parm. and pepper and set aside. Beat egg and put on a plate. Preheat your oven to 350*. In a large skillet pour in enough olive oil to cover the bottom of the pan, add the garlic and heat on medium. Make sure you don't burn the garlic! Dip chicken breasts into egg then into crumb mixture. Place in skillet and brown on both sides. Transfer them to a baking pan and sprinkle on extra crumbs as desired. Bake until done, about 25-30 minutes.

"Maple Carrots"
1-1/2 lbs. carrots- - peeled and cut into 1/2" rounds
1/2 cup water
3 Tblsp. butter
2 Tblsp. maple syrup
1Tblsp. brown sugar
salt
pepper

In large skillet, bring all ingredients to a boil. Reduce heat to med. and simmer for 8 minutes. Uncover and cook until reduced to a glaze (4-5 min.) Salt and pepper to taste (I didn't add any and loved it, but the recipe calls for it). Yields 5-6 servings.

I hope you enjoy this as much as we did! Both things were super easy to make and were really really tasty. :) I served it with mashed potatoes, but something like biscuits would be good too. Enjoy!!

Tilly~I've made your blog :-) Okay, my recipe did..how cool is that! I love that you made it your own. It is such a flexible recipe, I've made it with different side dishes(biscuits, rice and au gratin potatoes) and as you see, you can use different things for the crumb mixture.
The carrots look good too...yummy!
